FRESH food in 5 ingredients

By FreshSocial 02 Mar 2018

Sometimes it can be hard to find some inspiration (and motivation) at dinner time but look no further...

We have some ideas that you might not have considered and only using 5 ingredients (ok, salt and pepper don't count). It'll be easy on your bank balance and doesn't require you to be an expert chef skill either. Here are our favourites:

Butternut and sweet potato soup: Are you lazy when it comes to cooking and prefer something simple? Nigella's recipe is perfect - all you need to do is chop and boil your veggies and put them in a blender and you've got some delicious soup that'll last a couple days.

What do I need?
- 170g butternut squash
- 170g sweet potato
- Vegetable stock
- Spoonful of cinnamon

Chicken and vegetable kebabs: This is another straightforward recipe that goes a long way because you can make a big batch and put them into a wrap/pitta for lunches too. Got a combi-microwave oven? Pop them under the grill for a healthier and fresher option. If you're vegetarian, replace the chicken with another tasty vegetable.

What do I need?
- 4 skinless & boneless chicken thighs
- 1 pepper
- 1 courgette
- 140g cherry tomatoes
- 120g halloumi cheese

Burger and sweet potato fries: Would you rather save the money (and calories) with a homemade version of your favourite comfort meal? You can have a meat, vegetarian or vegan burger but for this recipe, we've chosen beef with halloumi cheese. Again, you should pop it under your combi-microwave grill to take it to the next level!

What do I need?
- 100g minced beef
- 185g sweet potato
- Burger bun
- Lettuce
- 40g halloumi cheese

Pea and mushroom risotto: A risotto is a perfect student meal, you can put anything in and it'll taste amazing. Plus, you don't have much washing up because everything goes into one pan! This risotto recipe is too good to miss and it's ridiculously cheap if you haven't already got the ingredients...

What do I need?
- 100g Arborio rice
- 1/2 a red onion
- Vegetable stock
- 3 mushrooms
- Handful of frozen peas

No more excuses for lazy meals on an evening - if you don't feel up to cooking every night just make a bigger portion and you can warm it up the next day!
